Kiddush and Havdallah are generally said over wine or grape juice because these are considered the most important, or honorable, beverages. If one has no wine or grape juice (or is allergic) one may make Kiddush Friday night on bread, and Shabbat morning and Havdalla on another respectable beverage, such as an alcoholic beverage (ex. beer or liquor) or juice or even Coke. One may not use bread for Havdallah or kiddush Shabbat morning (according to most opinions), and cannot use water or water-like beverages such as seltzer or lemonade, because these are not considered important, or honorable, enough.
